Squash Sauce

It’s a rainy New York Friday, but that won’t stop us city-dwellers from hitting up the farmers market. The gray sky is a bit of a downer, but it’s nice to see people weathering the weather to get the very best in local produce.

Days like this call for hot meals. Here’s a recipe for one I like a lot, featuring the noble squash.

Squash Sauce
1 Onion, sliced into thin strips
4 cloves garlic, minced
1 small squash (or pumpkin), diced into small chunks (about 3 cups worth)
1 large tomato, pureed
Olive oil
Salt
Fresh ground black pepper
1/4 tsp rosemary
1/4 tsp oregano
1/4 tsp red pepper flakes
1 bay leaf
A pinch of ground ginger
Instructions:
Sautee onion and garlic in olive oil until soft
Add squash and bay leaf, sautee in covered pan for a few minutes
Add salt, pepper, spices
Add tomato, simmer for 15 minutes or until squash is soft
Serve hot over penne pasta and drizzle with a little extra olive oil…
